This was my lunch yesterday.
Based on this recipe.
I used canned tuna, sauteed with soysauce, mirin, and a teeny pinch of sugar.
Green beans were used instead of the snowpeas, and cold soba with chilled dipping sauce instead of rice.I substituted the sake in the eggs (didn't have any) with a little mirin.
Whoops. Buckwheat Soba contain wheat (duh).
I ate it anyway...delicious!

How annoying is that about the buckwheat soba noodles. I am searching for some wheat free ones, but to no avail yet.
Eden organics makes 100% buckwheat soba noodles. I'm sure there are others out there, too. Buckwheat is different from wheat, and doesn't contain gluten, so you should be okay with those.
I've really been giving this low/no gluten thing a go as well! but yes, tofu lasagna for lunch...whoops! (double whoops: it was microwavable, meh!)
Amanda- thanks for the suggestion, Eden is a good brand- they'll probably have it at Whole Foods!
