Corner View: Petit Dejeuner






Ah,
Here it is. My breakfast. My trusty cup of tea. Today; English Breakfast plus milk. I recently had to stop drinking coffee 1st thing in the morning as it was upsetting my stomach.

On the menu: Debbie Bell's Oven Pancake.
To make:
To 1 cup of flour, add about 3/4 cup -1 cup of milk and 2 eggs. Whisk/ stir out the lumps, until you have a nice medium pourable consistency. In the meantime heat your oven to 425 F.
In an iron skillet that has been oiled with olive oil, add a nice chunk of butter (about 1-2 tablespoons) , and throw it in the oven (with just the butter- no batter at this point) until the butter melts. Remove skillet from the oven when the butter melts. Be careful. It will be very hot. Now pour in the batter. Add a handful of any fruit you have laying around (optional...today I used blackberries). Bake for about 10-15 minutes. The pancake will brown lightly and puff up on the sides, and the middle will be slightly springy to the touch and be yellow in color. Remove from the oven. Because of the olive oil & butter- the pancake should come out of the pan easily. Loosen with a butter knife if necessary. Serve with lemon wedges and a drizzle of real maple syrup. Serves 2. Or 1 very hungry blogging nurse on her day off. Enjoy.
